
Leftover Turkey Chilli
Ingredients
- 17-35 oz. leftover Turkey
- 1 chopped onion
- 1 chopped red bell pepper
- 2 garlic gloves
- 1 tbsp chilli powder
- 2 tbsp ground cumin
- 1 tsp dried oregano
- 1 chopped carrot
- 2 x 15 oz. cans crushed tomatoes
- 2 tbsp tomato paste
- 1 cup turkey or chicken stock
- 1 x 15 oz. can kidney beans, drained
- Olive oil
Method
1. Place the chopped onion to a frying pan with 1 tbsp olive oil. Sauté for 5 minutes until soft.
2. Add the bell pepper, carrot and garlic to the onion and cook until the carrots begin to soften.
3. Combine the chilli powder, cumin and oregano in a small bowl and add to the pan.
4. Add tomatoes, tomato paste, beans, stock and cooked turkey. Bring the mixture to the boil then leave to simmer with the lid off for 1 hour.
5. Serve with grated cheese.
